We buy the fish directly from Norway and Iceland, and on our premises proceed to transform it from uncured salted to cured salted codfish. Our codfish goes through a long curing process which makes its flesh tender, tasty and break easily into segments.
The cod are placed in drying tunnels with the air at a controlled temperature and humidity, for 24 to 100 hours depending on its size and thickness. At the end of the process, we get a cod which is 47% drier than uncured cod – the traditional Portuguese cure.
We have cod of different sizes and weights between 0.5 and over 4.5 kilos, which are separated into the grades designated (from smallest to largest) “Corrente”, “Crescido”, “Graudo”, “Special” and Jumbo.
The Liporfir cod is sold in 25, 15 and 10 kg boxes, but we also have 1 kg and 0.5 kg packages for certain products.
